Extra Fluffy & Light Birthday (Pan) Cake

This weekend, we celebrated Sammy’s 10th birthday.  I made him a surprise birthday cake decorated with all his favorite Pokemon characters because he’s the best little brother in the world.  Sammy loves sprinkles and pancakes, so I decided on making a giant sprinkle pancake cake.  I have seen Pinterest posts about baking cakes in a rice cooker and how it comes out perfectly fluffy and beautiful, and I was feeling ambitious that day.  YOLO.

I gathered all my ingredients.  I made it easy on myself by just using cake mix & pancake mix so I didn’t have to measure out the flour, baking powder, and all that other dry stuff.  The pancake mix makes the cake extra fluffy and thick.  Also, this recipe is actually kind of healthier and low fat since there is no added oil or butter.  I also used lite whipped cream instead of icing so it wouldn’t be as sugary (even though I added a ton of sprinkles to make up for it).

This recipe is so easy – just dump, mix, and bake.

Do NOT, I repeat, DO NOT cook the cake in a rice cooker.  Wow, that was a terrible mistake.  I only cooked it for 30ish minutes and it was completely burnt.  I couldn’t even salvage anything since the rice cooker saturated the cake with burnt smoke so even the non-burnt parts tasted like dead cake.  What a fail.

Luckily, I had enough leftover ingredients to make a 2nd cake… this time baked in an oven.  I still used the rice cooker bowl to bake the cake in since I knew that it would rise a lot in the oven, and I wasn’t sure if the cake pan was large enough.  The cake turned out to be PERFECT!  It was even thicker and fluffier than I imagined it to be.  After letting it cool for an hour, I spread on the whipped cream and covered the cake in sprinkles.

Then I surrounded the birthday cake with Pokemon characters.  I bought a set of 144 of these beauts on Amazon.

Insert sparkler candles.  These are semi-difficult to light, but it was totally worth it when they lit back up after Sammy repeatedly tried blowing them out.

TA-DA.  I’m so proud of my Pokemon masterpiece.  Now I just had to wait for Sammy to get home from school.

Sammy was so surprised when he got home!  He told me I was the best sister in the world (even though I already knew) and gave me a million hugs.  I was very impressed that he could name every single one of the Pokemon characters, and he played with them for hours.

OMG, look how thick and fluffy this cake is.  It was super delicious and Sammy loved it.

Happy birthday Sammy!  He had a great day and had a party with all his friends at Laser Tag.  If you have any birthdays coming up, I highly recommend making this cake.  Just please don’t make it in a rice cooker unless you like it extra burnt.

Ingredients:

  1. 1.5 cups Pancake mix
  2. 1.5 cups Yellow cake mix
  3. 2 cups Milk
  4. 3 Eggs
  5. 2 tsp Vanilla
  6. 8 oz. Lite whipped cream topping
  7. 1 container of Rainbow sprinkles

Directions:

  1. Pour pancake mix, cake mix, milk, eggs, vanilla, and 5T sprinkles into bowl and mix together until smooth.
  2. Transfer batter into greased cake pan or rice cooker bowl (prevents from overflowing during baking)
  3. Bake in 350 degree oven for 30-35 minutes
  4. Remove from pan and cool on wire rack for 1 hour
  5. Spread whipped cream on top of cake, then top with lots of sprinkles, and enjoy!
